Homemade Pasta Fagioli Soup



When I was growing up, I ate in a lot of different restaurants. Mostly because my mom didn't know how to cook and we ate at restaurants for survival. But I'm not talking about Burger King either. We ate at very nice restaurants on a daily basis for dinner so I got to experience a lot of different and delicious foods.

One restaurant we ate at a lot in particular was a little Italian restaurant in the middle of nowhere that made the best Pasta Fagioli soup. And ever since then, I've craved it like crazy. But unlike my parents, I think it's crazy to waste money in restaurants every night if you have food in the house. So since it was raining all day today, I thought it would be a perfect time to make homemade soup.


Pasta Fagioli Soup

Ingredients
1 tablespoon olive oil
2 stalks celery, chopped
1 onion, chopped
3 cloves garlic, minced
2 teaspoons dried parsley
1 teaspoon Italian seasoning
salt to taste
1 (14.5 ounce) can chicken broth
2 medium tomatoes, peeled and chopped
1/2 cup uncooked pasta
1 (15 ounce) pack dried cannellini beans

Directions
Heat olive oil in a large saucepan over medium heat. Cook celery, onion, garlic, parsley, Italian seasoning and salt in the hot oil about 5 minutes. Stir in chicken broth, tomatoes and beans. Bring to a boil, then simmer on low for 2 to 3 hours. Add pasta and cook until pasta is tender.
