As an amateur cook, I am always on the lookout for healthy snack options for my family. Honestly, we are a family of snackers. We could live on snacks alone instead of meals. But the majority of snacks you find in stores today aren't too healthy for you. So I wanted to try and figure out a healthy snack recipe that my family would love and not feel guilty for eating too.


So a few days ago we headed down to Publix to get the ingredients and figure out what I wanted to make. As I was walking through the store, I noticed the Weight Watchers snack cakes on the end of the frozen aisle and they looked too good to pass up. I quickly grabbed two boxes and immediately thought of something I could make my family as a healthy snack with them.



The cakes I bought were the Red Velvet Creme Cakes and they looked amazing! Plus each cake it only 2 Weight Watchers points each! My challenge was to make a healthy snack recipe using one cake per person as the ONLY item with Weight Watchers points at all.


Since my family loves blackberries, I decided to make a Blackberry Trifle. The only three ingredients you need to make a personal Red Velvet Blackberry Trifle are:

  • Weight Watchers Red Velvet Creme Cakes (1 per person) - 2 WWP
  • Fat Free Whipped Cream - 0 WWP as long as it is fat free
  • Blackberries - 0 WWP
Now to assemble, get out a personal size trifle cup and  start with your Weight Watchers Red Velvet Creme Cake. Take one and break it into smaller pieces to layer the bottom of the cup. Next add a little whipped cream. Then add a layer of blackberries. Add one more layer of whipped cream at the top and top off with blackberries. 

When you're done, it should look a little something like this:



And that's all you need to do to have a healthy snack option that's not only satisfying but only 2 Weight Watchers Points per serving!

I let my daughter, who is a red velvet cake lover, dig into hers first and it was gone within 30 seconds. Licked clean. I'm telling you, this is delicious!
