Blueberry Cupcakes with Vanilla Bean Icing #LittleChanges

I am addicted to fruits and always have been. Most of the time when I cook, I love using healthy items so that my family gets all the nutrition they need. But one of my weaknesses is baking, especially in the winter. I love baking all kinds of goodies so of course I try and add some nutritious items in my creations. And my latest one comes from watching Cupcake Wars too many times with Mary. Mary loves watching that show and she loves baking with me so we decided to make some delicious blueberry cupcakes!

Blueberry Cupcakes with Vanilla Bean Frosting

Ingredients
For the Cupcakes
3 1/4 cups all purpose flour
1 1/4 cups sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
6 tablespoons melted butter
1/4 cup olive oil
2 large eggs
1 cup buttermilk
1 cup whole milk
1 teaspoon vanilla extract
1 1/4 cups fresh Highbush Frozen Blueberries

For the Icing
2 sticks unsalted butter, cut into squares
3 1/2 cups confectioners' sugar
1 vanilla bean
1 teaspoon vanilla extract
1/4 cup milk

Directions

Preheat oven to 350. Line two 12-cup muffin pans with paper liners. Put flour, sugar, baking powder and salt in a large bowl. Whisk melted butter and oil in medium bowl. Add eggs, buttermilk, milk, & vanilla extract. Add buttermilk mixture to dry ingredients; whisk to blend. Stir in frozen blueberries. Divide batter among liners. Bake cupcakes about 23 minutes. Let cupcakes cool.

For the Icing
Using an electric mixer, beat the butter until smooth. Add the sugar, vanilla bean seeds and vanilla extract. Add milk and keep beating until smooth and creamy.

For this recipe, it's actually best to use frozen blueberries because if you use fresh, it can discolor your cupcakes. Mine came out looking like yellow cake and that's just what I wanted. The frozen blueberries I used were Highbush Frozen Blueberries and they are my favorite.
