Leave it to leftovers to keep you in the holiday spirit even after your big meals are over and done with. To help expand your post-feast repertoire, Hormel Foods asked me to find a new way to enjoy leftovers this holiday season. Impress your family and friends with this creative and tasty option.
Ingredients
Leftover turkey
1 glove garlic
2 ounces baby spinach
1 bunch parsley
1 bunch thyme
1 yellow onion
1 cup shredded cheddar cheese
3 tablespoons chicken demi glace
1 fresh bay leaf
1/2 cup barley
1/4 cup grated Parmesan
Directions
In a medium pot, add 1 tablespoon of olive oil on medium high until hot. Add the leftover turkey to get it warm and add onion and garlic until softened. Season with salt and pepper. Add the barley, bay leaf, chicken demi glace, Parmesan, shredded cheddar cheese, parsley, spinach, thyme and 4 cups of water. Increase heat to high and bring to a boil. Reduce heat to medium and simmer for 16 minutes. Serve after letting it cool.
