Homemade Low Sodium Chicken Soup + How to Save More Money on Your Groceries! #PublixV50

So since starting my new low sodium weight loss diet, I haven't been able to have soup in what seems like forever. I love to make my own soups but when you have to watch your sodium intake, it almost seems impossible to find a stock that is actually "low sodium".

Most of the stocks or broths in the grocery store claim to be low sodium, but when you read the back, it will usually tell you more than 450mg of salt per serving in the carton. And the carton normally has more than 5 servings in it. So that's a whole lot of salt to be putting in your cooking pot!

But last Friday, I made a discovery when I was kosher shopping for Passover. I actually found a low sodium broth that truly is low sodium. And it's kosher and organic too! What can be better? It is Empire Kosher Organic Low Sodium Chicken Broth. There is 140mg of sodium per serving and there are only 4 servings in the entire carton. That is the lowest one I have ever found so I scooped them up.

So what to make with such a wonderful find? Chicken soup of course! I love making soups, even in the summer. Normally I just throw everything into my crockpot and leave it. So here is a lovely homemade low sodium soup that will keep you satisfied!



Low Sodium Chicken Soup



Ingredients
  • Fresh organic chicken breast
  • Carrots, sliced
  • Peas
  • Potatoes, diced
  • Gluten free penne pasta
  • Parsley
  • Empire Kosher Organic Low Sodium Chicken Broth
  • Pepper to taste

Directions
Put all ingredients, except the penne pasta, into a crockpot on low for 8 hours. Take the chicken out and shred it. Put it back into the crockpot and mix thoroughly. On the stove, make gluten free penne pasta according to package and add to the crockpot. Turn crockpot off and serve immediately. (Make sure the crockpot is off the heat or your gluten free pasta will disintegrate in the broth.)
