When I met my husband, our very first date was to eat at a Chinese restaurant. As far back as I can remember, my husband has always loved Chinese food and I really did too, up until I was pregnant. When I got pregnant with Mary, I was very sick. I couldn't handle large amounts of salt at all and still to this day I have to watch my salt intake. So Chinese food at a restaurant is out of the question because soy sauce is full of so much salt. But recently I found a way to make Chicken Fried Rice for us without soy sauce at all and it comes out even better!

For our recipe, I used Success® Whole-Grain Brown Rice since it's boil in the bag. Boil in the bag rice is ten times easier than other rices because you don't have to spend the rest of the night scrapping rice out of your pans. You just simply throw the bag of rice into your pot and let it boil. Then just take the whole bag out to drain and your pot is still clean!

Here's how we made our Chicken Fried Rice:

Ingredients

2 bags of Success® Whole-Grain Brown Rice
1 tbsp olive oil
1 egg
1 clove fresh garlic
1/2 yellow onion, diced
1 scallion, diced
1/2 tsp salt
1/2 cup cooked chicken, diced
1/4 cup shredded cooked carrots
1/4 cup peas

Directions

In a skillet, heat the olive oil. Add in onions and garlic until simmering.Once cooked, crack egg and scramble in skillet. Then open both bags of Success® Whole-Grain Brown Rice and cook until tender, stirring often. Once cooked, add the chicken, scallion, carrots, peas and salt to the skillet. Cook until well heated and mixed.


Simple right? It's a quick and easy meal that can be made within 30 minutes time!
