Upside Down Peach Cake


One of my husband's favorite desserts in Pineapple Upside Down Cake, but Mary hates pineapple. And I honestly don't like pineapple in a cake either. But something we can all agree on is peaches. We buy peaches like crazy and all of us always have a peach on hand during the day. So I decided to take the sweetness of peaches and make an upside down cake that the entire family could enjoy.

Ingredients
3/4 cup butter, softened
1/2 cup brown sugar
Fresh sliced peaches
3/4 cup sugar
1 egg
1 tsp vanilla
1 1/4 cups flour
1 1/4 teaspoons baking powder
1/4 teaspoon salt
1/2 cup 1% milk


Directions
Melt 1/4 of the butter and pour into a cake pan. Sprinkle with the brown sugar and arrange peaches in the sugar. In a bowl, mix the sugar and remaining butter until fluffy. Add in egg, vanilla, flour, baking powder, salt and milk. When well mixed, pour over peaches. Bake at 350 degrees for 50 minutes.
